The End of Menu Plan Monday?

Could it be the end of Menu Plan Mondays at Vanderbilt Wife? Truthfully ... I'm not sure.

So here's what's happening in our life that's taking precedence over blogging.

Mr. V and I have hoped and prayed since we found out he got his current job that we would be able to live on campus at the school where he teaches. It is a private school with both boarding and local students, so there are dorms and they have dorm parents.

April and May passed this year, and for the second year we realized we would not be moving onto campus for the fall. We sucked it up and I made plans to paint some of our current rental house, do whatever was needed to make it feel a little more ours.

Two weeks ago, we got word that there "might" be a place for us on campus. It was last Wednesday before we had the affirmation that yes, we would be able to move on for this school year. The school year starts tomorrow, August 22. We were able to start moving in Saturday the 20th.

So, yeah.

Part of the deal of living on-campus and performing dorm parent duties is that our whole family can eat in the dining hall, three meals a day, every day. It blows my mind that I don't ever have to cook if I don't want to.

I have a difficult time picturing me being able to get my kids and myself dressed and to the dining hall in time for breakfast. But as for lunch and dinner, I think we'll eat there most of the time.

It is just such a weird concept to think about not cooking that I can't quite grasp it. I imagine that I will cook one or two dinners at home a week, but I don't know. We are simply going to roll with the punches and see how it goes.

I'm thinking that there won't be a Menu Plan Monday here anymore. And that's OK. I feel it was mostly for me to keep up with what I needed to cook that week, although it did drive some traffic here.

With the expected lack of cooking, I plan to rev up my baking some. I've promised Mr. V that his night of dorm duty each week I will deliver some treat for the students. So perhaps I will feature a weekly "treat" here on VW. I adore baking, but the problem has always been that I like baking more than I should be eating baked goods. It will be great to have teenaged boys I can feed!

We are so excited about this new phase in our life and I can't wait to share what I can with you.

Menu Plan Monday

Have I mentioned that I despise shopping for two weeks at a time? It stresses me out. I hate the meal planning. I hate the shopping (except at our lovely little farmer's market). I hate worrying about leaving the kids at home with my husband (I don't worry about him not being able to take care of them; I worry about them driving him bananas).

But I sure do enjoy only going every two weeks. And it does seem to help my budget. So, I do it.

How do you shop?

Sunday
Breakfast: eggs, bacon
Lunch: I am going to try this crockpot recipe for San Francisco Pork Chops with country-style ribs instead; grits; spinach salad
Dinner: If you can find it, you can eat it

Monday
Breakfast: oatmeal
Lunch: at mall
Dinner: Berry-Baked French Toast

Tuesday
Breakfast: Leftover Berry-Baked French Toast
Lunch: (at park fountain!) PBJ, pretzels, fruit
Dinner: Sloppy Joes on homemade buns, sweet potato cubes, grilled zucchini spears


Wednesday
Breakfast: Bacon-Cheddar Scones
Lunch: (at pool) fruit pouch things, zucchini bread, other snacks
Dinner: BBQ Chicken Pizza

Thursday
Breakfast: applesauce, cereal
Lunch: grilled cheese, cucumber salad
Dinner: Spaghetti and sauce

Friday
Breakfast: scones
Lunch: leftovers
Dinner: Chicken Taquitos, broccoli and carrots with dip

Saturday
Breakfast: baked Vanilla Donuts
Lunch: sandwiches
Dinner: leftovers or out

Menu Plan Monday

It was weird not to even post my menu plans for such a long time! Did you miss them at all? I am pretty sure they are for me more than anything, but I always hope to share some good recipe links and menu ideas.

I've been trying to plan breakfast-lunch-dinner plans since my husband is home many days during the summer. It's helped us a lot! (Unfortunately there are also days like yesterday, when my husband says, "The menu plan says we're having French toast!" and I say, "Hmm, I just used the last of the milk in my coffee ...")

Menu Plan Monday

Our last two weeks have been NUTS ... and with a birthday, a holiday, baby dedication, Mr. V's classes finishing, graduation, and a 5k ... the next two don't look like they're slowing down! We'll keep to menu as much as we can. But we try to be flexible. Especially if it involves free food somewhere else.


Sunday: Little League Stew (lunch), sandwiches/leftovers (dinner)
Monday: Easy Taco Bake (with homemade bisquick)
Tuesday: Gnocchi with Sausage and Swiss Chard (from Rachael Ray 365)
Wednesday: Leftovers
Thursday: Chicken Fingers with Curry Ketchup, Broccoli, Rice
Friday: Spaghetti with Big Beefy Meatballs and jarred sauce (we are slightly obsessed with Bertolli Fire-Roasted Tomato with Cabernet Sauvignon. It's awesome and I'm OK with the ingredient list.)
Saturday: Department party at Mr. V's school

Gnocchi with Sausage and Swiss Chard (this was a QUADRUPLE batch from my Whole Foods in a Hurry Cooking Day)


Breakfasts: Sweet Potato Pancakes, eggs and sausage patties, frozen waffles, fruit with peanut butter dip

Lunches: grilled cheese, wraps, corn dog muffins, macaroni and cheese, leftovers

Menu Plan Monday

This week may be a little nutso, but we'll at least know what meals we have! I am loving shopping every two weeks. It's really difficult for me to plan the meals and coupon, but once I have shopped it's so great to not have to go to the store (at least not for much - sometimes I go pick up milk or bread or something).

Yes, you will notice repeats from last week ... did more leftovers than I had planned. And gave my sister a choice, so she picked Chicken Piccata that was not going to be on the menu until this week. C'est la vie.  :)

 
Sunday: leftovers / sandwiches
Monday: Turkey breast in crockpot, mashed sweet potatoes, brussels sprouts
Tuesday: chili-ranch pork chops, corn on the cob, summer bulghur salad
Wednesday: leftovers
Thursday: spaghetti, green beans
Friday: out with family or take-out
Saturday: Pizza Pasta

I made some really wonderful sauteed rainbow swiss chard this weekend ... stay tuned for the recipe this week!

Menu Plan Monday

My mom will be here this week, so I imagine our menu plan may be fiddled with here or there. But I went ahead and stocked the fridge with ingredients for yummy meals that I am excited to eat! (I love food. Too much.)


Sunday: Ham and Potato Frittata (late lunch), pasta with spaghetti sauce (dinner)
Monday: Indian Curry in the crockpot (never got to when our power went out) over rice
Tuesday: Brown Bag Burritos
Wednesday: Turkey Meatball Sandwiches, Garlicky Baked Fries
Thursday: Ranch pork chops, strawberry bulghur salad
Friday: out (?)
Saturday: Pizza Pasta

My stomach is grumbling just thinking about all those delicious meals. What are you cooking this week?

Menu Plan Monday

Well. It's certainly been an interesting week. We got power this afternoon after four-and-a-half days without it due to the tornadoes and storms that came through TN/GA on Wednesday. Currently the contents of my refrigerator are: mustard, garlic, Worcestershire sauce, oranges, and soy sauce. We do have some meat in the freezer that I managed to salvage by taking it to a friend's house.

I believe tonight's agenda includes a big old shopping trip.

Needless to say, we did not stick to the menu for last week. Here's my new plan for this week.


Sunday: Sandwiches
Monday: Little League Stew, biscuits
Tuesday: Rosemary-Balsamic Pork Tenderloin, sweet potato cubes, salad
Wednesday: Pulled Pork with Lexington Red Sauce, coleslaw, Hasselback potatoes

Menu Plan Monday

It's 9:30 and it feels like it's midnight here at the "Vanderbilt" home! We enjoyed church this morning and then spent the afternoon prepping for a wonderful Easter meal with friends. It was fantastic but I am TIRED.

I hope you had an awesome holiday as well. The further I get in my walk with Jesus, the more I am awed by His great sacrifice. I cried like a baby during church.



Here's my plan for this week's meals.

Sunday: Easter menu (that butterscotch cake is YOWZERS good!)
Monday: leftovers
Tuesday: Indian Curry, brown rice
Wednesday: Chicken Sausage Meatballs with Gnocchi in Tomato Sauce
Thursday: leftovers
Friday: Ham and Potato Frittata
Saturday (in-laws here): Rosemary Pork Tenderloin, sweet potato cubes, salad

What's one thing on your menu this week that I have to try? I would highly suggest you try that frittata if you have leftover ham--it's super delicious!

Menu Plan Monday

 It's time for another installment of Menu Plan Monday! I kept adding things to the menu plan and then thinking, "We can't eat that! It's 70 degrees outside!" I'm thankful for Spring and being able to move into warm-weather recipes, aren't you?

I'm experimenting a little with adding dairy back into my diet. David already seems less sensitive to it when I've eaten it recently (on occasions where I was starving and there was nothing else). I would certainly love for my cheeseless phase to be over.

Menu Plan Monday

My virtuous breakfast-lunch-dinner menu plan was all but ignored last week. I stuck to the meals I had planned for dinner, but got lazy about breakfast and lunch. On Monday, I had a hankering for Lynn's peanut butter baked oatmeal, however; and since it's an easy pantry meal, it was in and out of the oven in no time!  To my great surprise, my toddler gobbled it up every time I served it to her.


This is my tentative menu plan for the week while I try to bear in mind I may have to head to Nashville to take care of our condo-flooding issue. (UGH.)





Sunday: Omelets

Monday: Chicken with Wine Sauce, baked potatoes, corn

Tuesday: Bacon and Onion-Stuffed Burgers, potato wedges, baked beans

Wednesday: Pasta Amatriciana, salad

Thursday: Jambalya with kielbasa

Friday: Pancakes, scrambled eggs, bacon

Saturday: Variation on Maple Chicken Salad using tangerines

Breakfasts: Berry Baked Oatmeal, granola, peanut butter toast, banana bread muffins (working on recipe)

Lunches: Tortilla wraps, sandwiches, soup, leftovers, grilled cheese, corn dog muffins, Crunchy Panko Chicken Tenders (recipe coming!)

Menu Plan Monday

Planning three meals a day worked really well for me last week, so I did it again! Since I am STARVING all the time (nursing) it's helpful to know what I should be eating for lunch.

I actually went grocery shopping for two weeks for the first time ever. We'll see how that works out!

Week + 1 day Menu Plan!

We got back from PA last night and arrived to a very empty refrigerator (empty of anything edible, anyway - old leftovers! ick!). So I needed to forge ahead with a menu plan and get to the store.

Since my husband is home this week for Spring Break, I thought it would be helpful to plan all three meals. That way we won't be sitting around staring at each other, wondering what we're supposed to eat.

Sunday: Pizza with Goat Cheese and Prosciutto (carried over from last week)
Monday: Slow Cooker Carnitas, fruit salad
Tuesday: Pasta Fagioli Soup
Wednesday: Sauteed Tilapia with Honey-Scallion Dressing, Fried Rice, sauteed green beans with soy glaze
Thursday: White Chicken Chili
Friday: spaghetti supper at church
Saturday: kids and I are outta here until next Thursday--visiting Nana and Poppy!

Lunches: Quesadillas, PBJ, grilled cheese, fruits and raisins for Libbie; fajitas, soup, leftovers for Mommy


Breakfasts: Omelets, French toast, breakfast burritos

It's almost laughable to say this ... but I've been thinking about trying to drastically reduce my carb intake lately. South Beach is the only "diet" that's ever worked for me. I just feel like I eat a LOT of carbs right now and probably need to replace those with vegetables. But the thought of going low-grain along with no cheese, sour cream, cream cheese, etc, makes me kind of break out into hives. Any advice?

Menu Plan Monday


We are going to be eating a whole lot of TOMATOES for the next while, because I made out like a bandit at Publix Italian Days this week. I may need to make a quick trip back to the store because I was shopping with two kids and it's nearly impossible to juggle coupons, an infant in a front carrier, and a "car cart" with a toddler in it while trying to keep one's mind focused on shopping!

We were also planning on eating leftovers on Saturday night and discovered that we really didn't have any. That's a good thing, because it means they were being eaten for lunch! But I had to swap out one of the meals I had planned for this week.

Anyway, here's my plan for this week (tentatively):

Sunday: Pancakes, Bacon, Eggs
Monday: Chicken Fried Rice 
Tuesday: Chicken Enchilada Soup (making my own cream of chicken soup)
Wednesday: Mini Meatloaves (based on this recipe, except I have to make mine without cheese), orange slices, fried potato slices
Thursday: Tomato Soup, grilled cheese (for Mr. V and Libbie)
Friday: probably eating out, my grandparents are going to be here
Saturday: Leftovers

$5 off 20 General Mills Deal
2 Green Giant frozen boxed vegetables / 2 @ $1.00 each
--used 2 .50/1 q's that doubled = .00

4 cans Muir Glen diced tomatoes and tomato sauce / $5.34
--used 2 $1/1 q from MuirGlen.com, 1 $1/2 q from coupons.com (not there anymore), and 2 $1/2 store q's from the Italian Days ad = .34

6 cans Progresso beans / $4.00
--used $1/4 store q from Italian Days ad = $3.00

4 cans Progresso soup / $4.58
--used $1/4 store q from Italian Days ad and $1/4 q from CouponNetwork = $2.58

2 cans Green Giant veggies = $1.29

1 large can Hunt's crushed tomatoes = .95

1 small can Hunt's tomato sauce = .34

TOTAL: $8.50
 - $5/20

GRAND TOTAL $3.50

- And I actually would have saved more if I had bought four cans of veggies and four cans of beans, but I am more likely to use the beans. But if you do that you can use the $1/4 store q in the Italian Days ad for canned veggies.

Other steals:
Sargento extra sharp shredded cheddar - $2/pkg, used $1.50/1 store q = .50
Sargento shredded pepperjack - $2/pkg, used $1.50/1 store q = .50
Mentos - .50, used .50/1 q, made .50

Not too shabby! With my other groceries, I spent $60.10 and saved $45.65.

Menu Plan Monday


It's a new week, a new menu plan! Trying to use some things from the freezer this week. It's DEFINITELY time for another once-a-month cooking marathon because my freezer is nearly empty. It makes me sad.
 
Sunday: Spicy Chicken Sausage & Peppers Pasta, salad
Monday: Beef and Barley soup, grilled cheese on homemade bread (for Adam & Libbie)
Tuesday: Mexican Roundsteak, brown rice, chips with avocado/salsa
Wednesday: Roasted Chicken, Mashed Potatoes, and baby carrots (EarthFare FREE meal for signing up on their new website!)
Thursday: Barbecued Chicken Sandwiches, Mustardy Mustard Greens, salad
Friday: Herbed Turkey Breast in Gravy, Peas, Fried Potato Slices
Saturday: Leftovers

Breakfasts: Eggs,  Raspberry Coffee Cake Muffins (based on the linked recipe), any leftover Berry Baked French Toast from Sunday School or baked Cheese Grits from MOPS (I am hoping because these are baked things the dairy won't bother David. I won't eat the cheese grits.)

Lunches: Leftovers, Cheese Quesadillas (for Libbie), PBJ

Menu Plan Monday


So here's the deal.

Earlier today Mr. V and I were talking with his mom about meal planning and cooking. Mr. V has told me on several occasions that I should just make a list of 20-30 meals and rotate them. I think he wishes he could have his favorite meals more often; I tend to try new recipes all the time. Unless I get on a kick, we might have one particular recipe 3-4 times a year.

So. I went and made a list of what I thought our "family favorite" meals were. But there's a small issue right now.

David is nearly 7 weeks old and for weeks has had super bad gain pains several times a day. It kills me to see him writhe in pain and know that somehow my milk is doing that to him! We've relied heavily on gripe water, which fixes the short-term problem but not the foundational issue.

I decided to try to cut out dairy for awhile and did successfully for about 4-5 days. His gas did seem to die down some in the latter part of that. Then I started reading and it seemed like the real issue could be my own forceful letdown. So I went back on dairy.

And then two days ago the painful gas came back.

Sigh.

All of that to say: I would love to choose from our family favorites list, but THEY ALL HAVE CHEESE!!

What can I say? I am apparently a Midwesterner at heart. Or just have a penchant for Mexican and Italian foods.

David does not seem to be extremely sensitive to dairy; I've used a little butter here and there and it doesn't appear to bother him. I'm trying to cut out as much as I possibly can, though.

So for the next few months our menu planning might be a little different. Eventually maybe my husband will get his wish. We shall see.

Sunday: Superbowl! Going to a party and taking Caramel-Pecan Bars.
Monday: Balsamic Chicken with Tortellini (for Mr. V and Libbie), Salad, Broccoli
Tuesday: Oven Country Steak, Baked Potatoes
Wednesday: Fish en Papillote, brown rice
Thursday: Thanksgiving Dinner Turkey Burgers, baked sweet potatoes, fruit salad
Friday: Buffalo Chicken Chili
Saturday: Leftovers
